Vision

Laurence De Smet and Abel Demeestere share a common vision: gastronomy as an experience, with respect for the produce, the seasons and the details.

With a background in classical cuisine and a love of refinement, Abel leads the creative direction in the kitchen — pure, layered and always with a distinctive signature. Laurence brings elegance to the dining room and a hospitality that feels natural: discreet, warm and attentive.

After years of experience in renowned establishments, Abel and Laurence took over Restaurant Arenberg with the ambition of bringing a renewed vision, while staying true to the restaurant’s rich tradition. EST is the result of that vision: a place where flavours speak, silence nourishes, and every dish tells a story.

Origin

EST comes from Latin and means “HERE IT IS” – a powerful affirmation of what is exceptional. Bishops used “EST EST EST” to mark the quality of something, a tradition we gladly continue at EST.

The name also echoes the West Flemish dialect, where “Ier est” expresses the same idea of affirmation and quality. It resonates all the more because Laurence comes from West Flanders, where authenticity and craftsmanship are deeply rooted. EST is not just a name; it is a promise: “HERE IT IS” – an experience that awakens the senses.

Fresh herbs from the garden

Inspired by the refined simplicity of French gastronomy, seen through a fresh, modern lens. A combination of classical techniques and surprising nuances that give French cuisine a contemporary feel.

Each dish tells a story of local, seasonal ingredients, of balance and elegance, with a touch of French flair.

Whether you join us for a quick lunch or an extended dinner, the à la carte menu at EST invites you to discover, taste and enjoy the many possibilities we offer.
